Cucurbita

Squash is one of the easiest vegetables to grow, and with so many colors and varieties available, they provide a lot of interest to any garden.

These frost-tender annual crops are grouped into summer squash and winter squash. Summer squash (such as zucchini, crookneck, straightneck, and patty pan) is harvested before it matures when the skin is tender and full of flavor. Winter squash (such as pumpkin, acorn, butternut, kabocha, and spaghetti squash) is harvested after the fruit is mature and often has a thicker, tougher rind.

Squash have two types of growth patterns. They can be upright and bushy (determinate) or grow flat on the ground and form vines.

All types of squash can be a healthy addition to your diet. They are rich in vitamins, minerals, and antioxidants. They also contain fiber and water, making them both hydrating and good for the gut.

Summer and winter squash grow best in fertile, well-drained soil containing high amounts of organic matter in full sun.
